Zucchini Pancakes

I am a simple kind of girl and so are these pancakes. They are made from a box, if you so choose you can use your favorite homemade pancake recipe, just add zucchini and cinnamon.

1 cup buttermilk (just add water) pancake mix
2/3 cup chopped zucchini (chop raw zucchini in food grinder or food processor)
1/4 tsp cinnamon
1/2 cup water

make 4-6 pancakes

Mix in batter bowl the pour onto hot greased griddle. Cook until bubbles in middle or golden brown, flip and let other side become golden brown. Serve with butter (real butter not margarine) and warm maple syrup.

Day of Concrete




Today we poured 45 or more yards of concrete on the farm in front of the north side of our new building.  I say we because I did help. The girls and I went out to watch, take pictures, and give moral support but the longer I watched the further the concrete got away from us. So I picked up a float and pitched in where I could. My mother-in-law came to pick up the girls, then I was committed. My Dad is a do-it-your-selfer so it wasn't the first time I helped do concrete. If you have never poured concrete for a rule of thumb, you have to move quick, take no breaks and sweat you bum off. I have never been involved in pouring concrete on a day that is cool and breezy. It has always been beastly hot and the  hotter it gets the quicker the concrete sets up and the faster you have to move. It is exhausting and you only have one chance to do it. LOL It is what it is.. So in the end it took 6 men and 1 woman to do a half-way decent job on our north concrete pad and all in a days work.

Sorry it's been a week and I'm just now posting about Independence's Day. We had a wonderful time with friends and family celebrating the holiday. I am so thankful that our "God Fearing Forefathers" were nothing like our government today. They were brave, hardworking, honest, loyal, and God fearing. I often think that Americans today don't really know what our forefathers had to sacrifice for us to freely live today. We take our freedom for granite and America is not on the path they laid for us. But honestly it's not to late if we heed to 2 Chronicles. This year is a big election year and I pray that the Christians of this great nation will fast and pray so they will do God's will in this election. I'm afraid that if we don't were going to suffer the consequences. So let this be an encouragement to every American to study and pray about your candidate before you fill out that ballet. The future for your children and this country depend on it.

St. Louis, MO

We took a quick couple of day away from home. We had a great time in the city of St.Louis. The city is a great place to visit and we had alot of fun, but I'm so country it's alway good to be home. I hope you enjoy the picture from our trip.
